Raspberry Caramel Porridge
This overcast weather calls for indulgent porridges. I love sweet things without it being too overwhelming, which this caramel sauce is perfect for. I could eat this everyday 😍
Serves 1 | V GF DF
Ingredients:
Porridge:
1/3 cup of steel cut oats
1 cup coconut milk
1 tsp maple syrup
Pinch salt
Caramel:
1 cup coconut milk
2 tbsp coconut sugar
Pinch sea salt
Raspberry compote:
1 cup frozen raspberries
3 tbsp water
1/2 tbsp maple syrup
Toppings:
Peanuts
Method:
Make the caramel beforehand by adding all the ingredients in a pot. Cook on a low/medium heat for 20-30 minutes or until the caramel thickens. Store in a jar.
Prepare the stewed raspberries by adding 1 cup frozen raspberries in a pot with other ingredients. Cook for 5-10 minutes until compote forms. Store in a jar.
Add 1/3 cup of steel cut oats, add ingredients. Cook for a min of 20 mins, add water if the oats start to form within that time, so the oats remain soft.
Test the oats, wait until they are soft, when the oats are just starting to form again, serve into a bowl.
Add caramel, stewed raspberries and top with peanuts.
